Yukon Gold Mashed Potatoes

  •   About 3 pounds Yukon Gold potatoes, peeled and quartered

  •    Pot of water to cover potatoes completely

  •    2-3 garlic cloves, peeled

  •    about 1/4 cup light sour cream

  •    salt and pepper to taste

Cook potatoes in water until tender.  Drain potatoes, retain garlic.  Mash potatoes, along with garlic adding enough sour cream to achieve desired consistency.  Salt and pepper to taste.  This quantity serves about 4 normal people or 2 teenagers!
