Star Mint Cookies

  •   3/4 Cup butter, softened

  •    1 tsp vanilla

  •    1 Cup sugar

  •    3 cups flour

  •    1/2 cup firmly packed brown sugar

  •    1/2 tsp salt

  •    1 tsp baking soda

  •    2 - 6 oz pkgs Ande's mints

  •    2 Tbs water

  •    Walnut or Pecan halves

  •    2 Eggs

Combine butter, sugar, brown sugar, eggs, water, and vanilla. Blend well.

Stir in dry ingredients and blend well.

Chill about 2 hours. Heat oven to 375 degrees.

Grease cookie sheet.

Enclose each mint in about 1 Tbs of dough. Place 2" apart, and if desired, top with pecan or walnut half.

Bake about 8-12 minutes or until done.
