Pumpkin Bread

  •   3 1/2 cups flour

  •    2 cups white sugar

  •    1 cup light brown sugar

  •    2 t. baking soda

  •    1 t. cinnamon

  •    1 t. nutmeg

  •    1 1/2 t. salt

  •    4 eggs, beaten

  •    1 cup oil

  •    3/4 cup water

  •    2 cups pumpkin, canned toasted walnut halves

Makes 3 loaves 

Three 8” by 4” by 2 ½ ” tin baking loaf pans

In a large bowl, combine flour, sugars, soda, cinnamon, nutmeg and salt.  Set aside.  

Using a mixer or food processor mix eggs, oil, water and pumpkin. Mix in flour-sugar mixture in batches.  

Pour into greased and floured loaf pans.  Top with walnut halves.           

Bake (preheated) 350-degrees for 55 minutes on lowest oven rack.  Test for doneness with long toothpick.  Cool.  Freezes well.  Warm to serve.
