• 1 very large cup

  • 3-4 soft poached eggs

  • 2 slices toast, buttered and spread with honey

  • salt and fresh ground pepper

Makes one serving

Cut toast into 1-inch pieces and add to cup.  Add the poached eggs.  Salt and pepper to taste.

I remembered this dish from my childhood.  I described it to Diana and she “invented” the recipe above.  Chris and Corey love it and are always asking for it.  Corey at one time suggested we substitute Nanaimo bars for the toast (only kidding).
